Segura Viudas Reserva Brut Cava
Fruitiness, freshness and complexity are the three principal defining characteristics of Segura Viudas Brut Reserva.
It is a blend of 50% Macabeo, 30% Xarel·lo, 20% Parellada sourced from a diversity of vineyards using the special attributes of each area to create a balanced and complex Cava with a dosage of 9g/l.
After pressing of whole grapes to retain their identity and avoid oxidation, the complexity is enhanced with Segura Viudas’s specific winemaking techniques.
The first and second fermentations are carried out using selected yeast strains. The blend is composed from 8 different cuvees, of which four, once the primary fermentation is complete, age on their lees, in tank, for 3 months. There follows a minimum of 15 months bottle ageing in contact with the lees, in conditions of total darkness and calm, 20 metres below ground and at a constant, natural temperature of between 14 and 16ºC.

Tasting Notes:
An elegant and persistent mousse with aromas of citrus and tropical fruits and light floral notes. The palate is complex and full of flavours of lime and pineapple, and long on the finish.
Very versatile with seafood, pasta and noodle dishes or soft milk cheese. Try with:
- Anchovies, dry tomato, and apple compote toast.
- Creamy omelette with blue cheese, dates, and walnuts.
- Porcini mushroom risotto.
- Monkfish stew with clams and peas.
